Mushrooms are the equivelant of meat for vegetarians. They have the same meaty fulfillment without the unpleasant meat taste. So it is no suprise when I try to incorporate them in my meals!
This particular meal, mushrooms with whole wheat pasta, took the cake! This is one of my few creations that I have been completely happy with. I may even recreate this for thanksgiving.
To prepare this meal you will need:
Baby Bella Mushrooms
Green, yellow, orange peppers
Garlic (fresh or powder)
Salt and pepper
Thinly slice the mushrooms. Chop the onion and pepper. Julianne the parsley.
Using the olive oil, sauté the onion and peppers in a larger pan over medium high heat until the onions become transparent and soft. Season with garlic, salt and pepper to taste. Add the mushrooms and parsley. Stir. Reduce heat and cover allowing the mushrooms to cook down.
Prepare the whole wheat pasta according to the package directions.
Assemble and serve!
Notice: I only add the seasons with the sauté process. No need to add any more as you really want to taste the earthy flavors of the mushrooms.
