Dinner to go!

I have a few minutes before I have to leave for work, so I fixed this easy meal to take for dinner. Basmati rice and red lentils. I love lentils. They are super easy to prepare and a major source of protein and other nutrients. Besides that, lentils, and other beans, are a staple in the vegetarian kitchen. Buy them dry and they store for months. Plus! No worries about soaking over night!

And! This dish is clean and healthy. No “extraness” here!

I am really trying to take this healthy eating to heart. I think I have been doing good. Well at least I feel like I’m doing good, and that certainly counts for something!

You will need:

1/4 Red Lentils

1/4 Basmati Rice

1/2 teaspoon of curry powder

Garlic powder

onion powder

Oregano

Olive Oil

Salt and pepper

1 1/4 cup Veggie stock

Water

Easy cooking:

First get the rice started, that takes the longest. Combine one cup of veggie stock and one cup of water in a small sauce pan. Bring to a boil. Add rice, one tablespoon of olive oil, teaspoon of oregano, and salt and pepper to taste. Bring back to a boil and reduce to a simmer. Let cook until liquids absorb.

Rinse lentils under cold water being careful to pick out any rocks.  Combine a 1 1/4 cup of veggie stock and one cup of water into small sauce pan. Add lentils, one tablespoon of olive oil, teaspoon garlic powder, one teaspoon of curry powder, and salt and pepper to taste. Bring to a boil and reduce to a simmer. Let cook until liquids absorb.

Let cool. Assemble your plate. And enjoy!
